Recipe Roundup: Summer
Here is your seasonal recipe roundup. Add these simple and tasty meals to your summer dinner (and lunch leftover) rotation before it’s too late. Taste tested and approved.
1. Whole30 Steak Bites with Sweet Potatoes and Peppers
Word to the wise, don’t over cook your sweet potatoes. Also, this is absolutely delicious as leftovers.
2. Burger Bowls
My husband could eat a burger every day of his life, I swear. Me? Not so much. I promise this switch up was exactly what I needed to keep burgers on the menu.
This looks and tastes gourmet and is one of the simplest things to make. Make it even easier by tossing everything on the grill and then assembling. Just buy the giant pesto jar from Costco!
Not all my kids love salad, so this one is more for me, but you can deconstruct for them. This peanut dressing is so simple and just the exact tang I like.
This technically isn’t a recipe that screams summer, but cook your veggies on the grill and that sings summer to me. Do not be scared away from the cashew lime crema. Maybe add a bit more liquid than the recipe suggests but oh, is it worth it. (I just used my Vitamix to blend it all up.)
